Description

Well. As Husband took his first bite, I was informed he really only likes apple pie from canned filling. WHAT?! Did I really just hear those words come out of his mouth? Four slices and two days later, I think we know who won.

Ingredients

  • 1 whole 9-inch Pie Shell, Baked
  • _____
  • FOR THE FILLING:
  • 2 Tablespoons Flour
  • ¾ cups Sugar
  • ⅛ teaspoons Salt
  • 1 whole Egg
  • 1 cup Heavy Whipping Cream
  • 1 Tablespoon Fresh Lemon Juice
  • 1 teaspoon Vanilla
  • 2 cups Granny Smith Apples (or More)
  • _____
  • FOR THE TOPPING:
  • ½ cups Butter, Cold
  • ½ cups Rolled Oats
  • ½ cups Flour
  • ½ cups Brown Sugar
  • Optional Garnish, Cinnamon

Preparation

First, bake your pie crust according to package directions, or, check out my cherry cobbler recipe for an EASY pie crust recipe to make your own.

Preheat oven to 425F.

Fashion a foil collar for your pie crust out of strips of foil. Place the foil collar around the edge of your pie crust before you fill with the apples.

Mix together your 2 Tablespoons flour, 3/4 cup sugar, and salt. In a separate bowl, mix the egg, cream, lemon juice, and vanilla; slowly whisk liquid into dry ingredients. Add apples and pour mixture into your baked pie crust.

Sprinkle streusel topping over apple filling (recipe below). Sprinkle a dash of cinnamon over topping.

Bake at 425 degrees F for 15 minutes, then lower your oven to 350F for 30-40 minutes or until set. Remove foil collar the last 15 minutes of baking time to allow crust to brown.

Topping:
Crumble together 1/2 cup cold butter, 1/2 cup oats, 1/2 cup flour, and 1/2 cup brown sugar (this makes a great fruit crisp topping as well!)

Hope you like it!
