Description

A simple white cake with a sour cherry middle.

Ingredients

  • 2 cups Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Salt
  • 1 cup Sugar
  • ½ cups Softened Butter
  • 2  Eggs
  • 1 teaspoon Almond Extract
  • ¾ cups Coconut Milk
  • 9 ounces, weight Sour Cherry Spread
  • Powdered Sugar, Optional Garnish

Preparation

Preheat the oven to 375 degrees F. Grease and flour two 9 inch round cake pans. Set aside.

Mix together the flour, baking powder and salt in a small bowl and set aside.

Using a mixer, blend the sugar, butter, eggs and almond extract. Beat until smooth and then alternately add some of the flour mixture and some of the coconut milk until each is fully combined. Mix until smooth.

Equally fill the prepared pans with the batter. Put them into the preheated oven and bake for 35 minutes or until done. When done, remove cakes from the oven and allow to cool.

When cakes are cool, place one on a serving plate flat side up. Spread all of the sour cherry spread all over the top of the cake. Remove the second cake from the pan and place it on top of the cherry spread layer. Place that cake round side up. Sprinkle with powdered sugar to finish.

I used a sour cherry fruit spread, it can usually be found in a health food section of your local grocery or places like whole foods or health foods unlimited.
