Description

Once again, the boxed cake mix helps out the home cook. These little delights are super easy to make and taste wonderful. Grab the kiddos and have them help you roll them in powdered sugar.

Ingredients

  • 1 box (18.25 Oz. Box) White Cake Mix
  • 1 whole Egg White
  • ½ cups Crisco
  • ¼ cups Water
  • 1 teaspoon Vanilla Extract
  • ½ cups Chopped Nuts
  • ½ cups Mini Semi-Sweet Chocolate Chips (optional)
  • 1 cup Confectioners Sugar (enough To Coat All The Cookies)

Preparation

Preheat oven to 375 degrees F. Line cookie sheets with parchment paper.

In a mixing bowl, combine cake mix, egg white, Crisco, water and vanilla extract. Mix until thoroughly combined (batter will be thick). At this point, add in nuts and mini chocolate chips (if you are using) and combine thoroughly.

Shape dough into walnut-sized balls (I like to use those little cookie scoopers with the spring release—makes cookie making so much easier!). Place balls about 2 inches apart on the cookie sheet.

Bake until set, about 10-12 minutes. Tops should be very lightly golden brown.

While cookies are still warm, dip them in powdered sugar then allow to cool. Or eat them while they’re hot while no one is looking (go ahead, I won’t tell anyone!).

Cook’s note: Everyone’s oven has hot spots so oven times will definitely vary. You don’t want them underdone. My oven took about 12 minutes. Also, try this with different cake mixes and extracts.
