Description

Sigrid was one of my mom’s dearest friends back in the Old Country, and I remember every single bite of every single carrot cake she gifted us. It’s such a basic, wholesome recipe, each bite you take makes you feel like you’re doing something good for yourself.

Ingredients

  • FOR THE CAKE:
  • 2 cups Sugar
  • 1 cup Vegetable Oil
  • 4 whole Eggs
  • 2 cups All-purpose Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Ground Cinnamon
  • 2 cups Grated Carrots
  • _____
  • For Icing
  • 1 stick Regular Butter, Softened
  • 1 package (8 Oz) Cream Cheese
  • 1 pound Powdered Sugar
  • 2 teaspoons Vanilla
  • 1 cup Pecans, Chopped Finely

Preparation

Cake:
Preheat oven to 350F

Mix together the sugar, oil and eggs in a large bowl. In another bowl sift together flour, salt, baking powder, baking soda and cinnamon. Add to first mixture and combine. Then add carrots and mix well. Pour into a greased and floured (Baker’s Joyed) pan (bundt, sheet cake, 9 x 13 pyrex) and bake at 350F until done, 25 (sheet cake) to 50 (Bundt pan) minutes, depending on the pan you use.

Cool completely.

Icing:

In larger bowl, cream butter and cream cheese. Add sugar and vanilla and blend, then mix in the nuts. Spread on cooled carrot cake.

Eat. Faint. Repeat as needed.

I made this cake for Easter this year and it was out of this world! I’ve never made a carrot cake before, but this recipe was really easy and everything turned out moist and delicious! Everyone especially LOVED the icing!

Made this cake as a “test run” before my parents come to visit later this month. It won rave reviews from my co-workers, who never seem to mind being guinea pigs. One person told me the frosting was “dangerous!” :-) I liked it a lot, though I noticed the directions did not have the temperature of the oven? I used 350F for 35-40 min for a 9×13 pan (aluminum)- it fell in the center after I took it out, but that didn’t stop it from being devoured!!!

I made this for Easter. It couldn’t have been any better or easier!! Loved it! Everyone loved it!! This will be one of our favorite all-time cakes! Thank you for sharing it!

Very easy to make, and it is good but maybe I did something wrong because I didn’t think it was the best carrot ever like everyone else. Not as moist as I had hoped. Will put some of the nuts in the cake and not all in the batter next time like someone else had mentioned. Will make again and hoping to change to 5 mitt’s!

Best. Carrot. Cake. Ever. Didn’t have pecans, so I used walnuts, and I put the nuts in the batter, rather than the frosting. Came out tasty!

I don’t even like carrot cake and I LOVE this cake!!! So good and pretty easy to make! I made it for a church function and there weren’t any leftovers for me to take home :(

I made this for Easter this year and it was absolutley delicious! I’ve never made a carrot cake before, but this recipe was easy and turned out perfectly moist! I made the sheet cake version and omitted nuts all together to appease my husband, but I think I’ll add them in the future. Will definitely make this again!

Can i give this 6 stars? This is the easiest, moistest carrot cake I have ever made and the frosting was super delicious! I may have eaten the frosting on Ritz crackers but that can’t be proven :)
