I followed the recipe very closely, and looked very dubiously at how runny the batter was, but figured it would all work out. Nope.
After 40 minutes in a 9×9 pan there still wasn’t a single spot – even near the edges – that the toothpick came out cleanly. I took them out, following the instruction not to overbake them. We let them cool slightly before trying them. I could taste the avocado, and they were overly sweet. The texture was like a thick pudding rather than a brownie everywhere except at the very edges of the pan.
On the plus side, this did make them slightly lava-cake-like.
I will try these again because my children liked them and one of them has an egg allergy, but I will cut down on the maple syrup and sugar, eliminate the applesauce, and probably also slightly reduce the almond milk or bump up the flour and baking powder a bit.

Wow!!!
I was looking for a brownie recipe using whole wheat flour and no butter, eggs or oil, and this one was an enormous success! I halved the recipe overall because I had half of an avocado I needed to use, and made a few other alterations (brown sugar instead of coconut sugar, skim milk instead of almond milk and less sugar and maple syrup than called for). I accidentally forgot to halve the amount of milk when i halved everything else, but the brownies still turned out perfectly after baking in a 9 by 9 for 35 minutes. I had my brownie slightly warm and with vanilla ice cream (the extra dark chocolate chunks i used in the batter really lent themselves to the flavor combination).
I would fully recommend these brownies to anyone – even barring the fact that they are healthified, they are the perfect balance of dense and moist and are also “structurally sound” (they came out of the pan cleaner than any brownies I have ever made). In short, these are my new favorite brownies – hands down. Thank you so much for sharing with us!

The second time I made these I left out the applesauce, doubled the flour and baking powder, and shorted the sugar and maple syrup slightly and they turned out much better. The toothpick came out clean after 35 minutes, but they were still moist and they had a texture more like brownies and less like pudding.

Yummy! These look so good! Where do you buy your coconut sugar? I can never seem to find it…
