Description

Chewy chocolate cookies with sea salt, pecans, caramel, and chocolate chips.

Ingredients

  • 1 cup Butter, At Room Temperature
  • 1-½ cup Sugar
  • 2 whole Eggs
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • ½ cups Cocoa Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Sea Salt
  • ½ cups Chopped Pecans
  • 8 whole Caramels, Chopped Into Fours
  • 1 cup Chocolate Chips

Preparation

Cream butter, sugar, eggs and vanilla until fluffy. Add flour, cocoa powder, baking soda and salt and mix until combined.

Fold in pecans, caramel pieces and chocolate chips. Refrigerate dough for 4-6 hours (or more). When ready to bake, preheat oven to 350 degrees, roll into balls and set on a baking sheet. (Note: refrigerating is the most important part. If you don’t refrigerate, when the cookies go into the oven, the caramel pieces will sink to the bottom and stick to the cookie sheet.)

Bake at 350 degrees for 8-10 minutes. Let cool completely, and drizzle with caramel sauce if desired.

Delicious! The only thing I’ll do differently next time is to enclose the caramel with cookie dough so it doesn’t run when I bake it. I refrigerated the dough over night, but some still turned out like blobs, ha ha. We all still enjoyed eating them though!

Absolutely delicious!
The recipe works just like it should and easily crates a cookie version of a “salted caramel” from Fran’s Chocolates, here in Seattle.
