Description

Little chocolate confections that include a hint of rum and dusted in a blanket of snow. The perfect holiday treat to serve on your cookie buffet or to make for an upcoming cookie exchange.

Ingredients

  • 11 ounces, weight Vanilla Wafer Cookies, Broken In To Finely Chopped Crumbs
  • 1 cup Finely Chopped Pecans
  • 1 cup Confectioners Sugar Plus 1/2 Cup For Dusting
  • ¼ cups Unsweetened Cocoa Powder
  • ⅓ cups Light Or Dark Rum
  • ⅓ cups Light Or Dark Corn Syrup

Preparation

In a large bowl stir together vanilla wafer crumbs, chopped pecans, 1 cup confectioner’s sugar and unsweetened cocoa powder. Stir in rum and corn syrup until blended. Shape in to 1” balls and roll in remaining 1/2 cup confectioner’s sugar.

Store in a tightly covered container.
