Description

A sweet and tangy grapefruit poundcake for two!

Ingredients

  • FOR THE CAKE:
  • 4 Tablespoons Unsalted Butter
  • ½ cups Sugar
  • 1 Tablespoon Grapefruit Zest (from 1 Medium Grapefruit)
  • 1 whole Large Egg
  • ⅛ teaspoons Baking Powder
  • Pinch Of Salt
  • ½ cups Flour
  • 3 Tablespoons Buttermilk

  • FOR THE GLAZE:
  • ½ cups Powdered Sugar
  • 2 teaspoons (or 3) Grapefruit Juice
  • Tiniest Bit Of Whiskey (optional)

Preparation

Before beginning, set all ingredients for the cake on the counter and let them come to room temperature. Then, butter a 5 ¾” x 3” x 2” mini loaf pan. Preheat the oven to 350°.

In a medium bowl, beat together with an electric mixer the butter, sugar and grapefruit zest. Beat this mixture for 3–5 minutes, until it becomes fluffy and pale yellow. Add the egg and beat until incorporated. Next, add the baking powder, salt and half of the flour. Mix to combine, and then add the buttermilk. Add the remaining flour and mix just until combined; do not over-mix the batter.

Pour the batter into the pan, place it on a small cookie sheet and bake 40-43 minutes. A wooden skewer inserted should come out with moist crumbs clinging to it. Allow the pound cake to cool for a few minutes before running a knife around the edge of the pan and dumping out the cake.

Before serving, whisk together the glaze ingredients and drizzle over the cake.
