Description

My grandmother gave me this recipe. It is great to use up some of the rhubarb plants in the yard.

Ingredients

  • FOR THE CRUST:
  • 2 cups Flour
  • ¼ cups Sugar
  • 1 cup Cold Margarine
  • _____
  • FOR THE FILLING:
  • 2 cups Sugar
  • 7 Tablespoons Flour
  • 1 cup Whipping Cream
  • 3 whole Eggs, Beaten
  • 5 cups Rhubarb Pieces Diced
  • _____
  • FOR THE TOPPING:
  • 6 ounces, weight Cream Cheese, Softened
  • ½ cups Sugar
  • ½ Tablespoons Vanilla
  • 1 cup Whipping Cream, Whipped

Preparation

1. Combine crust ingredients and press into a greased 9 x 13 pan. Bake at 350F for 10 minutes. Cool.
2. For filling: Combine sugar and flour. Stir in whipping cream and eggs, then stir in rhubarb. Pour over crust and bake at 350F for 45-60 minutes or until custard is set. Cool.
3.For topping: Blend cream cheese, sugar and vanilla. Fold in whipped cream. Spread over custard and refrigerate overnight.

This recipe was wonderful! I made it to take to work and everyone wanted the recipe, it was so good. I added an extra cup of rhubarb just because I had it. Will be making this often. Thanks for the recipe!

Wow!! This rhubarb/custard dessert is simply fantastic! Hubby & kids all loved it. It was easy to make and has the right amount of tangy plus sweet. And, the cream topping is sooo delicious! I’ll be making this often this summer. Thanks so much!
