Description

A soft and delicious skillet cookie that rocks three different types of peanut butter, including irreplaceable Reese’s Pieces. The perfect dinner party dessert!

Ingredients

  • 2-½ cups All-purpose Flour
  • 2 teaspoons Baking Soda
  • ½ teaspoons Salt
  • 1 cup Butter
  • 1-½ cup Light Brown Sugar, Firmly Packed
  • 1-½ cup Creamy Peanut Butter
  • 2  Large Eggs, Room Temperature
  • 2 teaspoons Pure Vanilla Extract
  • ¾ cups Reese's Pieces
  • ½ cups Peanut Butter Baking Chips
  • Ice Cream, To Serve (optional)

Preparation

Preheat oven to 340ºF.

In a medium-sized bowl, whisk together flour, baking soda, and salt. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat together butter and brown sugar on medium speed until creamy and fluffy, about 3–4 minutes. Add peanut butter and mix until combined, scraping down the sides of the bowl as necessary. Add eggs and vanilla and beat until combined.

Add half of the flour mixture and beat on low speed until incorporated. Add remaining flour and mix on low speed until just combined. Stir in Reese’s Pieces and peanut butter chips. Spread the dough evenly in a seasoned 10 ¼-inch cast iron skillet.

Bake in preheated oven for 48–50 minutes. Carefully remove from oven. Top with several scoops of ice cream, if desired, and serve immediately.
