Description

A chocolate and white chocolate chip cookie FULL of yummy goodness!!

Ingredients

  • 2 cups Quick Oats
  • ½ cups Whole Wheat Flour
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ½ cups Sweetened Shredded Coconut
  • 1 cup Butter
  • 1 cup Packed Brown Sugar
  • ¼ cups White Sugar
  • 2 Tablespoons Honey
  • 3 teaspoons Vanilla
  • 2 whole Eggs
  • 1 cup Bitter Sweet OR Milk Chocolate Chips
  • 1 cup White OR Butterscotch Chips
  • ½ cups Chopped Walnuts
  • ½ cups Chopped Pecans

Preparation

Preheat your oven to 350 degrees (F).

Mix together the first 7 ingredients and set aside.

Beat the butter, sugars, honey and vanilla with an electric mixer until nice and fluffy.

Beat in the eggs.

Add the wet ingredients to the dry ingredients and mix until combined.

Fold in chips and nuts.

Make balls and put on a parchment paper or Silpat lined baking sheet.

Bake at 350 degrees for 10 minutes.

(If you want a softer cookie use less time and if you want a crisper cookie add a couple of minutes).

Tip: You can wrap raw cookie dough in plastic wrap and store in fridge OR put in the freezer until ready to use.

These cookies are AMAZING!! I love them. I do not normally like coconut…in anything, but it is really good in these cookies.

I didn’t have pecans, so I used raisins instead, knowing that my kids love to eat raisins; the cookies turned out awesome!

These are amazing cookies! I changed the pecans to raisins (I didn’t have pecans, and I knew my kids would love raisins in the cookies) and the recipe turned out awesome!
