Raspberry Buttercream Icing

Description
Perfectly pink sweet and tart buttercream made with fresh raspberries.
Ingredients
- 1 cup Crushed Red Raspberries
- ½ cups Butter, Softened
- 1 teaspoon Vanilla
- 1 pound Confectioners Sugar, Or More As Needed
- ¼ teaspoons Salt
Preparation
Put fresh berries into a mesh strainer and crush them, allowing pulp and juice to fall into a bowl. Set aside.
In a mixing bowl, beat butter until fluffy. Add vanilla and berry pulp; beat well. Add sugar 1 cup at a time, mixing between each addition.
Add salt to taste.
