Quick Peach Cobbler (in Microwave Ramekins)

Description

This simple cobbler is on the table very quickly, when cooked in individual ramekins. Serve with a dollop of whipped cream, a splash of half-and-half, or a scoop of vanilla ice cream.

Ingredients

  • 6 teaspoons Butter
  • ½ cups Flour
  • ½ cups Sugar
  • 1 teaspoon Baking Powder
  • ⅛ teaspoons Salt
  • ⅓ cups Milk
  • 1 can (13 Oz. Can) Sliced Peaches In Syrup

Preparation

Preheat oven to 375 F. Have six microwave-proof and oven-proof individual serving size ramekins or mugs ready.

Place 1 teaspoon of butter in each ramekin. Place all the ramekins in the microwave for 1 minute or until melted.

In a medium sized bowl stir together the flour, sugar, baking powder and salt. Add the milk and stir until combined. Divide the batter into the 6 ramekins.

Place the peach slices (chopped if desired) on top of the batter and pour the syrup from the can over top, dividing the 1 can evenly into 6 servings. Do not stir.

Place all the ramekins in the microwave and cook on high for 4 minutes. Transfer entire microwave plate (if it’s oven-safe) with ramekins into the oven and bake for 8 minutes to brown. If the microwave plate isn’t oven-safe, put the ramekins on a baking tray before putting them into the oven.

Remove tray from the oven and cool for a few minutes, then serve with sweetened whipped cream or ice cream on top.
