Quick Microwave Caramel Fudge

Description

In South Africa, we prefer very simple ‘plain’ caramel fudge without nuts or chocolate. This simple version is quick to whip up in the microwave from ingredients that you should have in your pantry. The mixture gets very hot, so use oven gloves when you need to take out the bowl.

Ingredients

  • 1 can (14 Oz. Can) Sweetened Condensed Milk
  • 1 cup Icing Sugar
  • 1 stick Butter
  • 1 cup Castor Sugar
  • 1 teaspoon Vanilla Essence

Preparation

Put all the ingredients (except vanilla) together in a very large microwavable bowl or an ovenproof glass bowl. The mixture bubbles up enormously, so it cannot be too big, although it is fun licking your fingers while cleaning up the overflowed fudge from the turntable.

Microwave on high for 2 minutes (I have a 1000-watt oven, but reduce the time a little for new powerful ovens). The idea is just to melt everything together.

Stir the mixture well and spread a little butter around the inside of the bowl above the level of the ingredients up to the rim to prevent the mixture from sticking to the bowl, ‘climbing’ up and overflowing.

Microwave on high for 8 minutes and don’t stop it to look. It will really bubble up and should develop a light caramel colour.

Take it out with oven gloves as the bowl will be very hot!

Add the vanilla essence and stir or whisk well.

Pour into a greased baking tray and allow to cool.

Cut into squares before it is set. Cut the squares quite small, about an inch square, as it is very sweet, but very moreish.

Hi!
I just tried this, and I’m in Australia so measurements may have come out funny. The caramel came out either very very very dark, or burnt. I haven’t yet been able to taste it, so fingers crossed. I’m not sure of the wattage of my microwave, but it is definitely not new and either 1000W or lower.
If I make it again, I think 5 or 6 minutes is as long as I’d put it in the microwave, not 8.

Hi!
