Description

Queijadinhas are made with cheese, hence the name. It has shredded coconut and sweetened condensed milk to match its salty cheesy twist. What are you waiting for?

Ingredients

  • 1 cup Shredded Coconut
  • 14 ounces, fluid Sweetened, Condensed Milk
  • 1 Tablespoon Grated Parmesan Cheese
  • 2 whole Egg Yolks, Slightly Beaten

Preparation

Preheat oven to 325ºF. Line a cupcake pan with paper or foil liners (recipe makes roughly 8). Set aside.

Mix the ingredients in a medium-sized bowl until everything is combined. Using a spoon, put this mixture into the paper/foil liners, about 3 tablespoons in each well.

Bake for 30 minutes or until golden.

Recipe slightly adapted from Dona Benta Cookbook.
