Description

Pumpkin Whoopie Pies are a perfect fall treat. Easy to make and oh so yummy!

Ingredients

  • FOR THE CAKES:
  • 1-⅔ cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¾ teaspoons Salt
  • 1 Tablespoon Pumpkin Pie Spice
  • 1 teaspoon Ground Ginger
  • ½ sticks Unsalted Butter, melted
  • ¾ cups Packed Light Brown Sugar
  • 2 whole Large Eggs, Room Temperature, Lightly Beaten
  • 1 cup Canned Pure Pumpkin Puree
  • 1 teaspoon Pure Vanilla Extract

  • FOR THE FROSTING:
  • 1 stick Butter, Softened
  • 8 ounces, weight Softened Cream Cheese
  • 2 cups Confectioners Sugar
  • ¾ teaspoons Salt
  • 1 teaspoon Vanilla Extract

Preparation

Preheat the oven to 350F°. Line two baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking powder, baking soda, salt and spices. In a large bowl, whisk together the melted butter and brown sugar until smooth. With mixer on medium speed, beat in the eggs, pumpkin puree,and vanilla extract. Fold in the flour mixture.

Using an ice cream scoop, drop 12 large mounds of batter onto each baking sheet. Make sure to space evenly. With floured fingers, gently press down on each scoop to flatten the shape a little. Bake about 10 minutes. They will be springy to touch. Transfer to a rack to cool completely.

Frosting:
Beat the softened butter with the cream cheese. Add the confectioners’ sugar, salt and vanilla and mix on low speed until blended. Beat for about 2 minutes on medium high speed until nice and fluffy.

Spread the flat side of 12 cakes with the cream cheese frosting. Top each with another cake.

The same day I saw the recipe I made them. The way it made my house smell as they were baking was fantastic!
When the first batch was cool enough to frost I put the cakes together. The stomach ache I got from eating too many of them was so worth it! My neighbor inhaled them and he doesn’t even eat pumpkin. I brought a container full to the office and by the time I went for one..nothing but crumbs.

Really good! Mine were a bit puffy and dome shaped so they made whoopie balls when put together. I made them a second time tonight and used canned frosting. My first frosting batch was runny and way sticky so the betty crocker frosting was easier and creamier.
They disappeared in no time flat!

Made these during our Christmas baking frenzy. Very yummy. Next time I think I will make minis because I ended up with only 10 whoopie pies, but the flavors were awesome. I adore pumpkin. And I may have enjoyed the extra icing I was left with a little too much as well… :) Thanks for the recipe!

Delish! The pumpkin flavor was perfect and not overpowering. I added some cinnamon to the frosting, yum yum yummy.

Same issue as earlier review with number of pies made. My ice cream scoop gave me 7 cakes total. Not sure what size your scoop is.

I will definitely be making these again, and again…and again.
