Description

A pumpkin spice sugar cookie swirled with chocolate chips and marshmallows.

Ingredients

  • 1 cup Shortening
  • 2 cups Sugar
  • 3  Eggs
  • 1 cup Pumpkin Puree
  • 1 teaspoon Vanilla
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • ½ teaspoons Ginger
  • 5 cups Flour (plus More For Rolling)
  • 1 cup Chocolate Chips, More Or Less As Needed
  • 1 cup Mini Marshmallows, More Or Less As Needed

Preparation

Cream shortening and sugar. Add eggs, pumpkin, and vanilla, and mix well. Add salt, soda, baking powder, and spices and mix well. Add flour and mix until combined.

Wrap dough tightly in plastic wrap and refrigerate several hours or overnight.

Divide dough into 3 equal sections. Place 1 section on a floured surface, and roll into a rectangle, about 1/4 inch thick. Sprinkle a handful of chocolate chips and a handful of marshmallows over the top. (You can use more or less to your liking.)

Starting with a long side, roll dough into a log, containing all the chips and marshmallows. Slice log into generous 1-inch thick pieces, and place cut-side down on a baking sheet. Bake at 350ºF for 8-11 minutes, until edges are slightly brown.

Repeat with remaining dough sections.
