Description

Pumpkin Roll Out Cookies.

Ingredients

  • ¾ cups Real Butter
  • ½ cups Brown Sugar, Packed
  • 1 Tablespoon Orange Zest
  • ½ cups Canned Pumpkin Pie
  • 1 whole Egg Yolk
  • 1 teaspoon Pure Vanilla
  • 1-¼ cup Flour
  • ¼ teaspoons Cinnamon
  • ¼ teaspoons Ginger
  • ¼ teaspoons Nutmeg
  • Your Favorite Cookie Frosting

Preparation

1. Preheat oven to 375ºF.
2. In a large mixing bowl, combine the butter, brown sugar and orange zest with an electric mixer.
3. Add the pumpkin, egg yolk, and vanilla.
4. Gradually add the flour and spices.
5. Mix with your hands to create a soft dough.
6. Wrap in plastic and refrigerate for 30-60 minutes.
8. Roll out each piece to 1/8-inch thickness on a floured surface. If you want thicker cookies, don’t roll the dough out as much. Cut out cookies.
9. Cook at 375ºF for 15-20 minutes. Frost with your favorite frosting when cooled. I used Trader Joe’s white frosting and it was wonderful!
