Description

I combined two recipes (and probably inaccurately measured some ingredients) to come up with this for a Halloween party last year! It was my first time making pie, and I think it went well. Hope you enjoy.

Ingredients

  • 3 whole Eggs
  • ¾ cups White Sugar
  • ½ teaspoons Salt
  • 2 teaspoons Pumpkin Pie Spice
  • 1-¾ cup Pumpkin Puree
  • 1-½ pint Vanilla Ice Cream, Melted (but Not Boiling)
  • 2 whole 9" Unbaked Pie Shells
  • ½ cups Brown Sugar, Packed
  • ¼ cups Flour
  • 1 teaspoon Ground Cinnamon
  • ⅜ cups Super-cold Butter, Diced

Preparation

1. Preheat oven to 425ºF.
2. Whisk the eggs, mix in sugar, salt, pumpkin spice, and pumpkin. Then mix in melted ice cream.
3. Pour into the pie shells, bake at 425ºF for 15 minutes.
4. For the streusel, mix together brown sugar, flour, and cinnamon, and then add in the diced butter bit by bit, mixing it so that the butter is still in chunks but well mixed in the dry ingredients (super crumbly).
5. After the pies have been baking for 15 minutes, add on the streusel topping.
6. Reduce temperature to 350ºF for another 35 minutes or so, till a toothpick comes out clean from the pie (not from the streusel).
