Description

Bite-sized pumpkin dumplings made with won ton wrappers! At only 55 calories per dumpling, these are scrumptious and guilt-free!

Ingredients

  • 1 cup Pumpkin Puree (or Sweet Potato Puree)
  • 2 Tablespoons Honey
  • 2 Tablespoons Light Brown Sugar
  • 2 teaspoons Pumpkin Pie Spice
  • 16  Wonton Wrappers
  • Cinnamon
  • Sugar

Preparation

1. Preheat oven to 400ºF.
2. In a medium bowl, mix together pumpkin puree, honey, brown sugar, and pumpkin pie spice until well combined.
3. Grease a baking sheet with PAM. On a clean surface or cutting board, put one wonton down. Scoop just under 1 tablespoon of filling onto the center of the wonton. Dip your finger in a bowl of water and wet the edges of the wonton. Fold over the wonton to create a triangle. Wet your finger again and wet the edges to “seal” the dumpling. Place on the greased baking sheet. Repeat with remaining wontons and filling.
4. Lightly spray PAM across the dumplings. Sprinkle cinnamon and sugar on top of each dumpling.
5. Bake at 400ºF for approximately 10 minutes. Edges will be golden brown. Remove from oven. Flip wontons over. Return to the oven and bake an additional 2-3 minutes. The edges should be crisp and golden. Allow to cool 5-10 minutes before eating. These would be divine with vanilla ice cream!
