Description

These bars are creamy, not caky, and taste just like pumpkin pie without the crust. They should hold you over until Thanksgiving dinner!

Ingredients

  • 2 cups All-purpose Flour
  • 2-½ teaspoons Cinnamon
  • 1 teaspoon Ground Ginger
  • ¼ teaspoons Ground Nutmeg
  • ½ teaspoons Salt
  • 2 cups Dark Brown Sugar
  • 1 cup Unsalted Butter, melted
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 1 can (15 Oz. Can) Pumpkin
  • 2 Tablespoons Granulated Sugar
  • 2 teaspoons Ground Cinnamon

Preparation

1. Preheat oven to 350 degrees F. Butter a 9×13-inch baking pan and line with parchment paper, leaving an overhang on both sides.

2. In a medium bowl, whisk together the flour, cinnamon, ginger, nutmeg and salt; set aside.

3. In a large bowl whisk together the sugar and butter. Add the eggs and vanilla extract and whisk until combined. Add the pumpkin and whisk until thoroughly combined. Add the flour mixture and, using a rubber spatula, gently stir or fold the flour into the pumpkin mixture until just combined.

4. Scraped the batter into the pan and smooth the top. In a small bowl, stir together the granulated sugar and cinnamon, and then sprinkle evenly over the top of the batter. Bake for about 30 minutes, or until a thin knife inserted into the center has just a few moist crumbs on it. Cool completely and then, using the parchment as handles, lift out of the pan and cut into 24 squares. Store at room temperature in an airtight container.

These bars are very moist- The texture reminds me of a cross between pumpkin pie and fudge. So, they are really great that way. However, they are missing something. The bars themselves- even with all the sugar and cinnamon on top- aren’t as sweet or as flavorful as pumpkin pie. I think the batter needs some white sugar for extra sweetness, and maybe cloves, or doubling of the spices, for more flavor.

These were so easy that my 2 year old helped me. I cannot stop eating them because they are so delicious. I’m even gong to make them in place of pumpkin pie this year at Thanksgiving!

These have great pumpkin pie flavor. They are probably the best pumpkin bars I’ve ever eaten. I didn’t fold the flour into the pumpkin mixture I just wizzed it all up with my hand mixer. Rebel that I am I also increased the spices a bit (more cinnamon and a pinch of clove) and added a layered of light fluffy frosting on top. Because of the frosting I stored them in the fridge and I have to say these were about as fudgy as something without chocolate can be out of the fridge… I dunno if the mixing gave it some gluten and chewy fudginess or what but to me it was delicious! They were a hit with my hubby too!
