Description

These cookies are simply addicting. Perfectly chewy and moist, they are the most requested cookies in my repertoire!

Go ahead and make your own mix-in combos! I love mixing and matching dried fruits, pecans, and white chocolate.

Ingredients

  • 2 cups Flour
  • 1-½ cup Old Fashioned Oats
  • 1 teaspoon Baking Soda
  • 1-½ teaspoon Cinnamon
  • ¼ teaspoons Fresh Nutmeg
  • 1 teaspoon Pumpkin Pie Spice
  • ½ teaspoons Salt
  • 1 cup Unsalted Butter, Softened
  • 1 cup Light Brown Sugar
  • 1 cup Sugar
  • 1 cup Pure Pumpkin Puree
  • 1 whole Egg (large)
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup White Chocolate Chips
  • 1 cup Pecans, Chopped

Preparation

1. Preheat oven to 350 degrees F. Line your baking sheet with a silicone mat or parchment paper.

2. Stir in flour, oats, baking soda, cinnamon, nutmeg, pumpkin pie spice and salt in a medium bowl. Beat the butter, brown sugar and granulated sugar in a large mixer bowl until light and fluffy.

3. Add pumpkin, egg and vanilla extract and mix well. Next, add flour mixture; combine until all ingredients are incorporated. Fold in white chocolate chips and pecans.

4. Drop by rounded tablespoonfuls onto prepared baking sheets and bake for 12–14 minutes or until cookies are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

5. Enjoy.

These are just fantastic! Will definitely make this recipe again. Not too much pumpkin taste, loved the addition of white chocolate chips.
