Description

All of my favorite ingredients in one cookie!

Ingredients

  • 2 Tablespoons Butter
  • ⅓ cups White Sugar
  • ⅓ cups Brown Sugar
  • 1 whole Egg
  • 6 Tablespoons Pumpkin Puree
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • 2 cups Quick Oats
  • 1 teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 teaspoon Cinnamon
  • ½ teaspoons Salt
  • ¼ teaspoons Allspice
  • ¼ teaspoons Cloves
  • ⅛ teaspoons Ginger
  • ¼ cups Chocolate Chips
  • ½ cups Chopped Walnuts

Preparation

Preheat oven to 350ºF.

In the bowl of a stand mixer, cream together butter and sugars for about 2 minutes. Add in egg and mix until well blended. Add pumpkin and vanilla and mix for another minute.

In a separate bowl whisk together flour, oats, baking powder, baking soda, cinnamon, salt, allspice, cloves, and ginger. Slowly pour dry mixture into the wet mixture, mixing slowly to incorporate. Stir in chocolate chips and walnuts.

Drop tablespoon size dollops onto a cookie tray lined with parchment or a Silpat. Bake for 12 minutes.

These cookies will win no beauty contests but they are good. Low fat and easy to make they taste a lot like pumpkin bread and I love the spices.
