Description

Here at work we always have a Halloween/Nevada Day/Fall Potluck ~ I try to make something with pumpkin…pumpkin chili, pumpkin bread, pumpkin cobbler. I can’t remember where I found this recipe…but like I always do, I tweaked it.

Ingredients

  • 3 whole Eggs, Beaten
  • 1 can Pumpkin, 15 Oz Can
  • 1 can Evaporated Milk, 12 Oz Can
  • 1 cup Sugar
  • 1 Tablespoon Pure Vanilla Extract
  • 2 teaspoons Cinnamon, Ground
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Pumpkin Pie Spice
  • 1 package Yellow Cake Mix
  • 1-¼ cup Butter, Melted
  • 1 cup Pecans, Chopped

Preparation

Mix the first 8 ingredients together; pour into an ungreased 13×9×2 baking pan.

Sprinkle cake mix over the top; drizzle with butter.

Bake at 350F for 25 minutes.

Top with nuts and bake for an additional 15-20 minutes.
