Description

Pumpkin and chocolate are one of my favorite flavor combinations. You’ll want to welcome fall with this cuppie!

Ingredients

  • 1 box (12 To 20 Oz. Box) Chocolate Cake Mix
  • 4 whole Eggs, Divided
  • 1 cup Melted Butter, Divided
  • 8 ounces, weight Cream Cheese, Softened
  • 15 ounces, weight Can Of Pureed Pumkin
  • 1 teaspoon Vanilla Extract
  • 16 ounces, weight Confectioners Sugar
  • 8 ounces, weight Semi-Sweet Chocolate Chips
  • Whipped Cream, For Garnish (optional)
  • Chocolate Shavings, For Garnish (optional)

Preparation

Preheat oven to 350F. Combine cake mix, 1 egg and 1/2 cup melted butter in a bowl and mix well. Divide batter into cupcake liners (about 1 teaspoon in each liner) and pat down into the bottom.

Using a mixer, beat cream cheese until smooth, then add the pumpkin, remaining 3 eggs, vanilla, sugar and mix well. Reduce mixer speed and slowly add remaining 1/2 cup melted butter. Mix well then fold in chocolate chips. Spoon mixture into liners (about 1 tablespoon in each liner). Bake for 20-25 minutes. The cupcakes won’t be completely set when done.

Cool completely before serving. Garnish with whipped cream and chocolate shavings.

This was so good! I finally got around to making it and even my husband thought it was great, and he is not a big fan of sweets. Definately worth making.

I made an account specifically for this recipe just because I was surprised. Listen to the directions! I almost didn’t follow the directions just because of it not seeming right or that there is no way that it would turn out. But to my surprise, it definitely did! It was really good and I used Heavy Whipping cream to put on the top with semi-chocolate chip shavings and it turns out so good! the whip cream does make a good difference and you get a lot of different flavors instead of just a “meh” one flavor!

I haven’t baked anything in maybe 3 years prior to this one and I made this for a Halloween party and everybody loved them. They are a little difficult to take out of the small cupcake pan from how soft they are, it does help after they cool down but still really soft even afterwards. I would recommend this. I am surprised on how many they made, I did have extra bottom crust (from cake mix) and it ended up going to waste, not much though. Great recipe!
