Description

Delicious and soft pumpkin chip cookies!

Ingredients

  • 1 cup Canned Pumpkin
  • 1 cup Sugar
  • ½ cups Vegetable Oil
  • 1 whole Egg
  • 2 cups Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Ground Cinnamon
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 Tablespoon Skim Milk
  • 1 Tablespoon Vanilla Extract
  • 2 cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 350 degrees F.

Combine pumpkin, sugar, vegetable oil, and egg. Set aside.

In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt.

Mix the baking soda with the milk and then add it into the flour. Add pumpkin mixture into the flour mix and stir well. Stir in vanilla and chocolate chips.

Drop spoonfuls onto a greased cookie sheet and bake in the preheated oven for 8-12 minutes until cookies are browned and firm.
