A take on the classic chocolate chip cookies, using pumpkin and cinnamon. These would be a hit at any holiday celebration—if you feel like sharing (and you might not).
In a stand mixer, cream softened butter with sucanat. Add egg, vanilla, and pumpkin. Mix well. Add flour, oats, baking soda, cinnamon, and salt. Mix only until combined. Stir in chocolate chips. Drop by large tablespoonfuls onto parchment paper-lined cookie sheets.
Bake at 350ºF for 12-14 minutes or until golden brown and set around the edges. Remove immediately to wire racks to cool.
