Description

Your go-to cookie this fall!

Ingredients

  • 1-½ cup Sugar
  • ½ cups Shortening (or Butter)
  • 1 whole Egg
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Canned Pumpkin Puree
  • 2 cups All-purpose Flour
  • ½ teaspoons Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1 cup Butterscotch Chips

Preparation

Preheat oven to 350ºF. Using a stand mixer with the paddle attachment, cream the sugar and shortening for 3-4 minutes. Mix in the egg, vanilla and pumpkin.

In another bowl, combine flour, salt, baking soda, baking powder and cinnamon. Add to the pumpkin mixture and mix until just combined. Stir chips in with a spoon.

Drop spoonfuls onto sheet pans lined with parchment paper. Bake for about 12-15 minutes.

Makes approximately 30 cookies.
