Description

Delicious fall snack with a great texture!

Ingredients

  • 3 cups Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 cup Butter, Softened
  • 2 cups Brown Sugar
  • 2 whole Eggs
  • 1 cup Pumpkin Puree
  • 1 cup Toasted Walnut Pieces Or Halves
  • 11 ounces, weight Butterscotch Chips

Preparation

Preheat the oven to 350 degrees. Prepare a half sheet pan with parchment or baking spray.

In a medium bowl, combine the flour, baking powder and salt. Set aside.

In the bowl of a standing mixer, add the butter and the brown sugar and cream until well combined and fluffy. Add the eggs and mix to combine well. Add the pumpkin puree and mix well. (It will look curdled, but it is fine!)

Add the dry ingredients and mix well. Add the walnuts and the butterscotch chips and mix until just combined.

Add the batter to the prepared pan. Bake the batter until the bars are just golden, about 20-25 minutes. Do not over bake!

Cut into bars and serve!

These arejust the combination of Blondies and pumpkin I have been looking for. Your picture looks so good that I wish they would invent taste-O-vision (the heck with scratch & sniff concept). I will be making them this weekend. Thanks for so many great recipies!

what a festive idea! I tried this for a little pumpkin-carving event, they were a big heat. The walnuts add the perfect texture, too!
