This is a yummy fall staple at my mother-in-law’s house. It’s great as is, or even with some ice cream.
Bars:
Mix eggs, sugar, pumpkin and oil (or applesauce) together. Sift flour, baking powder, baking soda and cinnamon. Add to the batter. Stir in nuts if using. Pour batter into a greased and floured jelly roll pan. Bake at 325 degrees for 25 minutes. When cool, frost.
Frosting:
Mix frosting ingredients together and beat until smooth. Spread on bars.
