Description

This is pumpkin yumminess!

Ingredients

  • FOR THE BARS:
  • 4 whole Eggs
  • 1 cup Oil
  • 1-⅔ cup Sugar
  • 16 ounces, weight Canned Pumpkin
  • 2 cups Flour
  • 2 teaspoons Cinnamon
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • _____
  • FOR THE ICING:
  • 3 ounces, weight Cream Cheese
  • ½ cups Butter
  • 1 teaspoon Vanilla
  • 2 cups Powdered Sugar

Preparation

Mix together eggs, oil, sugar, and pumpkin.

In a separate bowl, mix flour, cinnamon, salt, baking soda, and baking powder.

Add dry ingredients to the pumpkin mixture. Pour into a large cookie sheet or bar pan.

Bake at 350F for 25-30 minutes.

For the icing: Cream together cream cheese and butter. Add vanilla and powdered sugar. Mix well. When cake is cool, spread icing over cake.
