Description

The perfect combination of flavors for your fall gathering or late-night dessert.

Ingredients

  • FOR THE MUFFINS:
  • 2-½ cups Flour
  • 2 cups Sugar
  • 1 Tablespoon Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 2 whole Eggs, Beaten
  • 1 can Pumpkin Puree (14 Oz)
  • ½ cups Vegetable Oil
  • 2 cups Apples, Peeled And Chopped

  • FOR THE STREUSEL:
  • 2 teaspoons Flour
  • ¼ cups Sugar
  • ½ teaspoons Cinnamon
  • 3-½ teaspoons Butter

Preparation

Preheat oven to 350 degrees (F) and lightly grease muffin tray (this recipe makes 18 standard sized muffins).

To make the muffins, in a large bowl, sift together flour, sugar, pumpkin pie spice and baking soda. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture until moist and fold in apples. Spoon batter into muffin cups.

In a small bowl, mix together the streusel ingredients, adding butter 1 teaspoon at a time. Spread over muffins before baking.

Bake in the oven for 25-30 minutes until a toothpick comes out clean.

Very moist and the pumpkin/apple flavors always blend so well…a good go-to recipe when one has left over apples on hand from the fall harvest.
