Description

This bunt cake just calls to be eaten. One slice and you’ll be ready to sneak another. With the sinful taste of chocolate chips you’ll forget that there is 3 cups of fresh zucchini in it.

Ingredients

  • 2 cups White Sugar
  • 2 whole Eggs
  • 1 cup Oil
  • 1 teaspoon Vanilla
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Salt
  • 3 cups Flour
  • 1 teaspoon Baking Powder
  • 3 cups Zucchini (shredded-do This Step First)
  • ½ cups Chopped Nuts (optional)
  • ½ cups Chocolate Chips (optional, But Very Yummy)
  • ½ cups Coconut (optional, But You'll Be Glad That You Added It)

Preparation

Preheat oven @ 325

Mix first 3, than add the vanilla.

While mixing add all dry (B. soda, Cinn., Salt, Flour, + B Powder. In a large bowl.

Now alternate adding dry mix and shredded zucchini to the wet mixture.

Now you can add the fun stuff. I like to add 1c. ch. chips and 1/2c. coconut since I like to live on the edge.

Now you dump the mixture into a greased bunt pan or 9×13 if you want to have your cake (and eat it too) faster. I like the looks of a bunt. Bake until toothpick when placed in center of cake comes out clean.

Let cool and then if you like add a simple frosting of: Powdered Sugar and splash of Vanilla and Water. Drizzle over top.

I made this for a potluck and everyone raved about it. My husband doesn’t normally like zuchini in baked goods but loved this one! Thanks!!!

I made this last night, the coconut, nuts and chocolate chips give it a very nice flavour!
