Description

A perfect holiday cookie, the classic oatmeal chocolate chip cookie gets festive with bursts of pomegranate flavor!

Ingredients

  • ½ cups Butter, Room Temperature
  • ½ cups Brown Sugar (lightly Packed)
  • ½ cups Granulated Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 1-¼ cup All-purpose Flour
  • 1 cup Quick Cooking Oats
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Chocolate Chunks, Semisweet Or Dark
  • 1 cup Pomegranate Arils

Preparation

Preheat oven to 375ºF. Line a large baking sheet with parchment paper and set aside.

Cream butter and sugars until smooth. Add egg and vanilla extract and mix well.

In a separate bowl, whisk together flour, oats, baking powder, baking soda, and salt. Slowly add dry ingredients to the butter mixture, mixing just until incorporated. Stir in chocolate chunks, then gently stir in pomegranate arils.

Drop dough by tablespoonfuls onto a lined baking sheet about 2 inches apart. Bake for 12-13 minutes, until golden brown. Let cool on the baking sheet for a couple minutes before removing to racks to cool completely.

Note: 1 whole pomegranate will yield approximately 1 cup arils.

Definitely tasty, especially right out of the oven! My baking time was closer to 10 minutes. I also substituted 1/2 cup of whole wheat flour and then added the remaining 3/4 cup of white flour. I liked the burst of tart whenever I got a pomegranate granule. But I might use just a little less next time :)

I had my doubts when I started making these cookies, and so did my husband when I told him what I was making. But ohmygosh were they ever delicious. The combination of chocolate and pomegranate is perfect. Thank you so much for giving me something to do with all those pomegranates sitting on my counter!

WOW!!! This was AMAZINGLY delicious cookie. I did double the recipe and used just one pomegranate and found it to be a nice balance. The pompegranates seem to like to sink to the bottom so be sure to stir throughly.
