Also known as Apam Dot Dot. Honestly I was a little skeptical about steam cake. It’s just not my cup of tea. I prefer something more buttery and toasty. But these steam cakes brought out a softness and sponginess that no other cakes can possibly compare to. And I believe the key is to beat the eggs for a very long time to create the air inside the cakes.

Ingredients

  • 2-¼ cups All-purpose Flour
  • 3 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 3 whole Large Egg
  • 1-¼ cup Granulated Sugar
  • ½ cups Milk
  • 2 Tablespoons Milk
  • 1 Tablespoon Vanilla Extract
  • 1 drop Pink Food Coloring Paste
  • ¼ cups Strawberry Jam

Preparation

Heat up your steamer. Place cupcake liners into 10 ramekins.

In a medium sized bowl sift together flour, baking powder and salt. Set aside.

In the bowl of a standing mixer with a whisk attachment, mix eggs and sugar on high for 10 minutes, until very pale and light. Mix in milk and vanilla, then fold in dry ingredients.

Remove 1/4 cup of the batter and put it into a small bowl. Add the food coloring paste into the 1/4 cup of batter and stir to combine. Transfer colored batter into a piping bag with a tiny round tip.

Spoon 3 tablespoons of the plain batter into each ramekin. Add a teaspoon of jam, then cover with another 2 tablespoons of plain batter. Pipe small pink dots on top.

When the steamer is ready, place the ramekins into the basket and steam on low heat for 10 to 15 minutes.
