Description

This cake was my grandmother’s recipe!

Ingredients

  • 1 package (18.25 Oz. Box) Duncan Hines Yellow Cake Mix
  • 1 package Pistachio Instant Pudding (3 1/2 Oz.)
  • 4 whole Eggs
  • ½ cups Oil
  • 1 cup Club Soda
  • ½ cups Chopped Nuts

Preparation

Preheat oven to 350 degrees.

Mix all the ingredients together. Bake in a tube pan for 50 minutes or in two 9″ layer pans.

My grandmother used the following icing for the pistachio cake:

1 package of Dream whip
1 small package of instant pistachip puddin
1 1/2 cups of cold milk
3 oz. cream cheese (softened)
Cream the cream cheese and add the milk. Add dry ingredients. Put on the cake as a frosting! Yummy!

In response to clswiecz, I make a version of this cake (we call it Watergate cake, for some reason) and top it with this:
• 2 packages Dream Whip whipped topping mix
• 1 small (3.4 oz) box pistachio instant pudding
• 1½ cups milk

Beat together the Dream Whip and milk, then add pudding. It will thicken upon standing. Either frost the cake, or dollop on each piece as served. YUM!

Wow! This sounds so easy and delicious! What type of glaze or frosting would you suggest? Or is it more of a pound cake type where you don’t need it?
