Description

Great “tropical” oatmeal cookies. Whole wheat flour adds a little bit of health, a little bit of color, and lots of deliciousness!

Ingredients

  • ½ teaspoons Baking Soda
  • 1 Tablespoon Warm Water
  • ½ cups Butter
  • ¾ cups Brown Sugar, Packed
  • 1 whole Egg
  • 2 teaspoons Vanilla
  • ⅓ cups Whole Wheat Flour
  • ⅓ cups All-purpose Flour
  • ½ teaspoons Salt
  • 1-½ cup Old Fashioned Rolled Oats
  • ½ cups Dried Pineapple
  • ½ cups Slivered, Blanched Almonds

Preparation

Preheat the oven to 375F.

Dissolve baking soda in warm water and set aside. Use a mixer to cream butter and sugar together. Add baking soda mixture, egg, and vanilla, and mix by hand until just incorporated. Add each flour, mixing after each addition until just incorporated. Stir in salt, oats, pineapple, and almonds.

Form 2-inch balls and place on ungreased cookie sheets (it should make about 20 balls). Use your hand to flatten the dough to about 3/4 inch thickness. Bake in the center of the oven until just lightly browned, 6-8 minutes.
