Description

A Christmas tradition from my childhood.

Ingredients

  • ¾ cups Butter
  • ¾ cups Sugar
  • 1 whole Egg Yolk
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Powder
  • 1 teaspoon Peppermint Extract
  • 6 drops Red Food Coloring

Preparation

Beat butter with sugar until fluffy. Add egg yolk and vanilla. Stir in flour, salt and baking powder. Divide dough in half. To one half add peppermint and food coloring. Keep the other half plain.

Roll out each half of dough separately between 2 sheets of waxed paper, to 10″x16″. You may use a knife to even off the ends and fill in the empty spots!! Use a ruler to measure each one, so that they are nearly exactly the same size. Remove the top piece of wax paper on each color. Flip one over on top of the other. Remove the top piece of waxed paper, and using the bottom piece, roll up from the long side (removing the paper as you go). Then, wrap the roll in floured waxed paper and chill until firm (I usually do this overnight).

When you are ready to bake… Unwrap and slice 1/4″ thick slices of the dough onto an ungreased cookie sheet. Bake at 350F for about 10 minutes or until very light brown at the edges.
