Description

Blondies made with peppermint bark.

Ingredients

  • 3 ounces, weight Peppermint Bark
  • 1 stick Unsalted Butter
  • 1-⅓ cup Sugar
  • 2 whole Eggs
  • 1 teaspoon Pure Vanilla Extract
  • ½ teaspoons Kosher Salt
  • ⅔ cups All-purpose Flour

Preparation

1. Preheat oven to 350 F. Line an 8×8 inch square baking pan with parchment paper, extending the paper up two sides. Butter the parchment or spray with nonstick cooking spray.
2. In the top of a double-boiler, over gently simmering water, melt the peppermint bark and butter together until only a few un-melted pieces remain. Remove from heat and stir until smooth and fully melted.
3. Whisk in sugar, then whisk in the eggs one at a time. Then whisk in the vanilla, followed by the salt.
4. Stir in the flour with a rubber spatula. Once it’s fully combined, scrape the batter into the prepared pan. Spread the mixture until it is even.
5. Put the pan into the oven and bake for 35-40 minutes, until a toothpick in the center comes out clean.
6. Then remove it from the oven and let it cool in the pan for at least 45 minutes. Then “flip” the baked blondies onto a cooling rack. Allow them to cool for another 5-10 minutes before slicing them. They actually didn’t completely settle until they sat overnight, but they still tasted great!
