Description

A favorite of mine, simple and delicious.

Ingredients

  • 1 stick Butter
  • 1 cup Light Corn Syrup
  • 1 cup Sugar
  • 3 whole Eggs, Beaten
  • ½ teaspoons Lemon Juice
  • 1 dash Salt
  • 1-¾ cup Chopped Pecans
  • 1 whole 9"/deep-dish Unbaked Pie Shell

Preparation

1. Preheat oven to 425ºF.
2. Brown butter in a saucepan until it is golden brown. Be careful not to burn it.
3. In a separate bowl, mix together the remaining ingredients (minus the pie crust, of course).
4. Pour into the unbaked pie shell and bake at 425ºF for 10 minutes. Reduce heat to 325ºF and bake for 40-45 minutes more.

Notes:
Place the pie on top of a rimmed cookie sheet while baking, just in case a little of the filling “escapes.”
Once out of the oven, the pie will continue to bake. The pie will firm up as it sets. If it still looks “jiggly,” put it back in the oven for a few more minutes.
