Description

The perfect dessert for when you don’t have a fancy tart pan!

Ingredients

  • FOR THE DOUGH:
  • ½ teaspoons Salt
  • 1-¼ cup Flour
  • 1 Tablespoon Sugar
  • 1 stick Butter
  • ¼ cups Ice Water
  • _____
  • FOR THE ALMOND CREAM:
  • 3 Tablespoons Butter, Softened
  • ¼ cups Sugar
  • 1 whole Egg
  • ½ teaspoons Almond Extract
  • 1 Tablespoon Flour
  • ½ cups Almond Meal
  • _____
  • TO ASSEMBLE THE GALETTE:
  • 3 whole Pears, Peeled, Cored And Thinly Sliced
  • 1 Tablespoon Butter, Melted
  • 1 Tablespoon Sugar
  • Powdered Sugar, For Dusting

Preparation

Make the dough:

Combine dry ingredients in a bowl. Using a pastry blender or knives or your fingers, blend butter into flour mixture. Gradually add in ice water and mix using your hands until you get a ball of dough. Wrap in plastic wrap and refrigerate for a few hours (I refrigerated it overnight).

Once the dough has chilled, roll it out to about a 12-13 inch circle. It doesn’t matter if it’s a perfect circle.

Make the almond cream:

Using a hand or stand mixer, cream together butter and sugar. Next, beat in egg and almond extract until smooth and sorta runny. Blend it the flour. Lastly, add almond meal and continue to blend until smooth.

To assemble the galette:

Take the dough out of the fridge and spread the almond cream onto the dough, leaving a inch or two border all around.

Next, take some pears. Peel, core and thinly slice. Arrange the sliced pears onto the almond cream part of the galette. Next fold the edges up over the top. Trim any excess dough.

Take the melted butter and brush it onto the assembled galette and sprinkle with sugar sugar.

Bake at 375F for 45-55minutes. (Mine took about 50 minutes but start checking it around the 45-minute mark.)

Cool, dust with powdered sugar and serve!

This was absolutely delicious! Made this for our holiday dessert and it was a hit! It reminded me of a danish with the almond flavor. If you love pears and almonds, you will absolutely love this!

And so simple to make too! Will definitely be putting this in my dessert rotation – thanks for a delicious recipe!
