Description

Quick and easy cookies.

Ingredients

  • ½ cups White Sugar
  • ½ cups Light Corn Syrup
  • 1 dash Salt
  • 1 cup Peanut Butter
  • 2 cups Rice Krispies Cereal
  • 4 Tablespoons Butter
  • ¼ cups Brown Sugar
  • ½ teaspoons Vanilla
  • 1 Tablespoon Milk
  • 1-¼ cup Powdered Sugar

Preparation

Combine white sugar, corn syrup and salt. Cook until sugar is dissolved. Blend into peanut butter and cereal. Put mixture in a buttered 9″ pan. Allow to cool.

For the topping, melt the butter and brown sugar. Remove from heat; add vanilla and milk. Add powdered sugar and beat till smooth. Spread on top of cereal mixture. Cool and cut into small squares.

Thanks for posting these, mom! i haven’t made them in a long time because the karo syrup thing hasn’t caught on in the UK. I decided to try them with some substitutions. In place of karo syrup, I used a malted syrup (made with corn and barley) that I found at the health food store. I had brown crisp rice cereal from another project so replaced the rice crispies with that. And I only had organic natural peanut butter so used that too. The frosting was made just as written! They tasted just as I remember them! While I wouldn’t go as far as to call them ‘organic healthy snacks,’ the variation in ingredients wasn’t a problem.
