When my mom asked me to make peanut butter Rice Krispie bars for her, I was skeptical about how they would turn out. But they turned out great! She suggested putting a chocolate frosting on top which was the perfect combination.
For the bars:
1. In a small saucepan over medium heat, stir honey and peanut butter together until smooth.Simmer mixture over medium heat until it has a slight liquid consistency.
2. In a large bowl combine peanut-honey mixture and 2 1/2 cups cereal. Add enough remaining cereal to form a thick, but still moist consistency.
3. Press mixture into a greased (13 x 9 inch) baking dish and chill 2 hours.
For the frosting:
4. Combine frosting ingredients and stir until smooth.
5. Spread bars with frosting. Refrigerate 20 minutes then cut into bars.
Yield: 1 dozen bars
Store bars in the refrigerator for up to 3 days.
