Description

Peanut butter, oatmeal, cranberries and chocolate!

Ingredients

  • 1 stick Butter, Room Temperature
  • ¾ cups Chunky Peanut Butter
  • 1 cup Dark Brown Sugar
  • ½ cups Granulated Sugar
  • 2  Eggs, Room Temperature
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • ½ cups Whole Wheat Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 teaspoon Cinnamon
  • 3 cups Old Fashioned Oats
  • 1 cup Dried Cranberries
  • 1 cup Bittersweet Chocolate Chunks

Preparation

In a large bowl, cream butter and peanut butter with the sugars until light and fluffy. Add eggs and vanilla and mix until blended.

In another bowl, mix together flours, baking soda, salt and cinnamon; add this slowly to the creamed butter mix until blended. Stir in oats, then add cranberries and chips. Mix until well distributed.

Heat oven to 325F. Line baking sheets with parchment paper. Use a large ice cream scoop and drop balls of cookie dough onto the baking sheets (6 per pan).

Bake for 20-25 minutes, rotating pan half way through*.

*If baking two cookie sheets at once, switch pans halfway through the cook time, switching pans to upper/lower rack when rotating.
