Description

My husband loves these. From Pat Cochran, wife of Dr. Cochran, the head of the University of Arkansas math department when I matriculated there. I have long since forgotten differential equations and number theory, but I still have this recipe! (and my husband)

Ingredients

  • FOR THE BARS:
  • ½ cups Shortening
  • ½ cups Sugar
  • ½ cups Brown Sugar
  • ½ cups Peanut Butter
  • 1 whole Egg
  • ¼ cups Milk
  • ½ teaspoons Vanilla
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • 1 cup Flour
  • 1 cup Quick Rolled Oats
  • _____
  • FOR THE ICING:
  • 2 cups Powdered Sugar
  • ¼ cups Cocoa Powder
  • 3 Tablespoons Butter
  • 3 Tablespoons Boiling Water
  • ½ teaspoons Vanilla

Preparation

For bars(first eleven ingredients):

Cream shortening, sugars, peanut butter, egg, milk & vanilla until fluffy. Add everything else and beat til well combined.

Spread in a greased 13 x 9 x 2 inch pan. Bake at 350 for 20 minutes. Cool completely

For chocolate icing(last five ingredients):

Combine sugar & cocoa, then quickly stir in melted butter & water (I microwave the butter/water for 1 minute). Add vanilla and beat until smooth, spread quickly over cooled bars before it sets up.

These cut neatly if you let them set up overnight – but they never make it that long!

These were just as billed: super simple, super delicious. I let mine sit in the refrigerator overnight before cutting them; they made beautiful bars. However, they taste best at room temperature. Thanks for a great recipe!
