Description

These Peanut Butter Cup Stuffed Monster Cookies are a delightful indulgence. They are full of that oh-so-delicious peanut butter and chocolate flavor. Try them…you won’t regret it!

Ingredients

  • 1 bag Peanut Butter Cups, 12 Ounce Bag
  • 2 sticks Butter
  • ½ cups Sugar
  • 1-½ cup Brown Sugar
  • 2 whole Eggs
  • 1 Tablespoon Vanilla
  • 2 cups Flour
  • ½ teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 2 teaspoons Kosher Salt
  • 1-½ cup Oats
  • ½ cups M&Ms
  • 1 cup Chocolate Chips
  • 2-¼ cups Rice Cereal (such As Rice Krispies)

Preparation

Unwrap and then cut peanut butter cups in half. Set aside.

Cream butter with sugars until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and beat.

Combine flour, baking soda, baking powder, and kosher salt. Add to the creamed mixture and mix till combined. Add in the remaining ingredients, adding the rice cereal at the very last. Do not overmix!

Use a cookie scoop to scoop 1-inch size balls of dough. Once the dough balls are made you are ready to assemble. Flatten each ball slightly, then take a piece of peanut butter cup and place between two dough balls. Mold the cookie dough around the peanut butter cup until you have it completely covered. They will be gigantic!

Bake at 350 degrees F until golden brown, 12-14 minutes, then allow to cool on a rack.

Serve with glasses of cold milk.
