Description

Peanut butter cookies stuffed with pretzels and a peanut butter cup.

Ingredients

  • 1 cup All Natural Peanut Butter
  • ¾ cups Brown Sugar
  • ¼ cups Granulated Sugar
  • 1 whole Egg, Room Temperature
  • 2 Tablespoons All-purpose Flour
  • ¼ teaspoons Salt
  • 1 teaspoon Baking Powder
  • 24 whole Mini Twisted Pretzels
  • 12 whole Mini Peanut Butter Cups (they Come In A Bag, Found In The Candy Aisle)

Preparation

Preheat oven to 350ºF. Move rack to the middle of the oven. Line cookie sheet with parchment.

Mix peanut butter and sugars until well blended. Crack egg in a small bowl and beat. Mix into the peanut butter mixture. Sprinkle flour, salt and baking powder over top and mix in.

Take 1 teaspoon of dough and flatten out in your hand. Place 1 pretzel, then a peanut butter cup, and then top it off with another pretzel. Then fold up the sides of your cookie dough. It won’t cover your entire sandwich. Now take another teaspoon of dough and cover the top of your cookie. Make sure all your seams are closed. Place on baking sheet about 2 inches apart.

Bake 8–10 minutes. Do not overbake.

I tried these out and was pretty happy with the results. I doubled the dough recipe, halved the peanut butter cups, and used only one pretzel per cookie, but still only got about 26 cookies. Next time I’ll use less dough per cookie. I think I’ll also put in the two pretzels as it could have used more. But the flavor was great and I loved the different textures in the cookie. I brought these to work today and they’re getting rave reviews so I’ll probably put them in my regular cookie rotation. Thanks for the recipe!
