Description

Peanut butter, oats, crisp rice cereal, make for a yummy cookie, great to pack in lunches or to the next bbq.

Ingredients

  • ½ cups Oil
  • 2 whole Eggs
  • ½ cups Peanut Butter
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 1 teaspoon Vanilla
  • 2 cups Flour
  • ¼ teaspoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1-¾ cup Oats
  • 1 cup Crisp Rice Cereal

Preparation

Preheat oven to 375 degrees. In a large bowl, add oil, eggs, and peanut butter. Beat with an electric mixer until combined. Add in sugars and vanilla, beating with a mixer until combined. Add remaining ingredients and mix until all is combined. Use a cookie scoop or form into balls and place on a greased or lined baking sheet. Smash cookie balls slightly and bake for 10-12 minutes or until lightly browned.

I too was excited to try these cookies, but alas, even though the recipe was followed, the dough was more like the mixture for an apple crisp v.s. cookies, just didn’t hold together. Would the author of this recipe be able to give any suggestions?

I made these recently and unfortunately, I would not recommend them. I measured the ingredients very carefully, etc. When I attempted to make them into balls and then flatten somewhat (as suggested), they were all crumbly. I worked and worked to get them to hold together. I did bake them, but they broke apart and crumbled while eating them and were a mess. I guess I’ll be leary of cookie recipes calling for oil. I had thought they sounded so good with oatmeal, rice crispies, etc. Bummer…
