Description

A healthy cookie that is crispy on the outside and soft and gooey in the middle!

Ingredients

  • ¼ cups Sugar, Plus Extra To Sprinkle On Cookies
  • ½ cups Peanut Butter
  • 1 whole Egg
  • ½ teaspoons Vanilla Extract
  • ¼ cups Whole Wheat Pastry Flour
  • ¼ cups Old Fashion Oatmeal (Not Quick Oats)
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 3 packages (about 1/2 Oz. Fun Size Packs) Mini Reese Pieces

Preparation

Preheat oven to 350ºF. Line a baking sheet with parchment paper.

In a bowl, beat the sugar and peanut butter together until creamy. Add your eggs and vanilla extract and beat until combined. Add your flour, oats, baking soda and salt and beat until combined.Stir in your Reese’s Pieces.

Place a tablespoonful (I used half a cookie scoop) of cookie batter onto the baking sheet and sprinkle with sugar. Bake for 8 to 10 minutes.

Makes 18 cookies.
