Description

A soft and chewy cookie made with the best mix of flavors!

Ingredients

  • 8 Tablespoons Butter
  • ⅓ cups Peanut Butter
  • 2 cups Plus 2 Tablespoons Of Flour
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1 cup Brown Sugar
  • ½ cups Granulated Sugar
  • 1  Egg Yolk
  • 2 teaspoons Vanilla Extract
  • 2  Small Ripe Bananas, Mashed
  • 1 cup Small Chocolate Chips

Preparation

Preheat oven to 325 F. Line a baking sheet with a silicone mat or parchment paper. Set aside.

In a saucepan over low heat, melt the butter and the peanut butter. Once melted, remove from heat and set aside to cool.

In a medium sized bowl, sift together the flour, baking soda and salt. Set aside.

In a separate bowl, whisk together the melted butter mixture, brown sugar and granulated sugar until well combined. Whisk in egg yolk, vanilla extract and mashed banana until combined. Add the dry ingredients about ½ cup at a time, combining completely after each addition. Fold in the chocolate chips.

Spoon dough onto prepared baking sheet and bake for 10-12 minutes, or until the edges are golden. Allow to cool on pan for about 5 minutes and then transfer to a wire rack to cool completely. Store in an air-tight container.

These were good. They are softer cookies but not too much like a cake or quick bread. The dough was very sticky so using my cookie scoop really didn’t work. The banana flavor and amount of chocolate chips is good, but the peanut butter taste wasn’t as pronounced as I would have liked. I will probably add peanut butter chips if I make them again. They
